Daikon Soup

Ingredients

1 big
2 cans (28 oz.)
good shake
daikon radish (luo buo)
dried mushrooms
carrot
chicken or vegetable broth
white pepper
water to taste (about equal to broth volume)

Steps
:: 1 :: This is a very basic, very customizable soup. Slice daikon and carrots thickly (into disks or half-/quarter-disks). Soak mushrooms for 10-20 mins (two rinses).

:: 2 :: Throw everything in and bring to a boil. Keep at boil until vegetables soften, then reduce heat to low to keep warm until sreving.
